The project All in Lab was born of the impassioned conversations that three professionals from the food world had around the table in those few restaurants open on a Monday. Richard Rossi built up significant experience in Michelin-starred restaurants, whilst the hearts of Lorenzo Nardi and Estela Julia Bevilacqua beat for delicious pastry treats.
We believe that there are certain meals we will remember all our lives, flavours of such sophistication that they make you tingle. We believe in the value of the soil and its produce, which we harvest and consume. We believe that cuisine is all of this and more. This is why we have dedicated ourselves with this playful obstinacy: we select the supply chain, we put in the dedication and the tireless curiosity to experiment, to play around with flavours.
We have created this refined cuisine laboratory in the heart of the Le Cure neighbourhood here in Florence. We serve the whole city and beyond with catering and supplier services, gourmet consultancy, and personalised cooking courses.
